Negative stress Pietrain (halothane resistant) was developed by introgression of the C allele at Hal locus of Large White into the Pietrain genome. The creation of this new biological type was obtained in two steps: i) the determination of the genetic structure of Pietrain by the analysis of the F2 of a Pietrain X Large White cross and ii) the reconstitution of the Pietrain genome around the gene C of the locus Hal by successive backcrosses. The carcass characteristics and the commercial classification by halothane genotype were first described. The contribution of major gene IGF2 on Pietrain conformation was also discussed. Nutritional, technological and organoleptic qualities of stress negative Pietrain meat was then approached.
