Evolution of the control of residues and contaminants in food over a period of 25 years is reviewed in its regulatory, technical (analyses performed in laboratories) and strategy aspects.
Numerous regulatory texts at the
European level, directives, regulations
and decisions have been published particularly since the end of the nineties. A dramatic evolution of analytical techniques has been observed going from
bioassays on living laboratory animals for controlling hormones to sophisticated physicochemical methods based on mass spectrometry through in vitro bioassays on genetically modified cells in culture. The development of research in this sector is essential for a better protection of human and animal health, environment and to fight against frauds ensuring thus the conformity of food
